We have a 2007 (I put in the wrong year earlier) Honda Odyssey and since new the transmission has had  issues. Between 30 to 50 MPH when you are on a level or uphill grade the torque converter will lockup and unlock causing the engine speed to vary approximately 200RPM's. This will continue to act up until you speed up above 50 MPH, slow down to where the converter is not in lockup mode, or you go on a downhill grade. The dealer performed an upgrade to the PCM which did not help the problem and now it shifts hard when the converter locks up at highway speeds. I took it back to the dealer and the service manager said there is nothing they can do since these shiftpoints are set at the factory. Also to top it off they cannot reload the old PCM settings which shifted better so we're stuck with the poor shifting. I think they know there is a problem but they don't want to have to fix it.

Our 2007 did the same thing as your original problem.  It tended to be worst first thing in the morning on my way to work when the engine was cold.  It took several trips to the dealer and 2 or 3 drives with the mechanic to get the car to "act up" for the mechanic, since by the time we got to the dealership 1) the car was warmed up, and 2) the dealership is on a flat, busy highway with no hills, etc.

Anyway, the dealer ended up replacing the torque converter.  That seemed to correct the problem, although every now and then I'll feel something weird in that same range (30-50 mph) when the RPMs kind of jump around and it makes me wonder if we've completely fixed the problem or if we have more trouble in store for us in the future.

HAs anybody had the latest PCM update done for the 2007 and up vans? Our van goes in next Thursday and I'm wondering if it's any help.

I had the PCM update done about a month ago.  I've heard several stories where people said it made matters worse; however, my experience has been good.  The van hasn't 'juddered' since the update and it seems to shift a little better.  Keeping my fingers crossed...

I also had the transmission fluid flushed at the time of the update -- that may have been a contributing factor too.
